MISE EN PLACE

BROWNIES:

  • 7 oz unsweetened chocolate, chopped
  • 1 C + 2 T unsalted butter, cubed (2 1/4 sticks)
  • 5 large eggs
  • 2 3/4 C granulated sugar
  • Fire Spice | Cocoa-Coffee packet
  • 2 tsp Kosher salt
  • 1 tsp vanilla extract
  • 1/4 C all-purpose flour

COCOA DUST TOPPING:

  • 1 tsp cocoa powder
  • 1 T powdered sugar

Bake Time: 40 min
Serves: 18 2” Brownies

HOW – TO

BROWNIES:

  • Preheat oven to 350° F and grease 9” x 13” baking pan.
  • Melt chocolate and butter in a heat-proof bowl set over a saucepan of simmering water, stirring occasionally until smooth.
  • In the bowl of a stand mixer (or in a bowl with an electric hand mixer), beat eggs and sugar for 2-3 min on medium-high until pale and fluffy.
  • Add contents of Fire Spice | Cocoa-Coffee packet, salt and vanilla, and mix to combine.
  • Scrape butter and chocolate mixture into bowl and mix until incorporated.
  • Add flour and mix on low speed until just combined. Scrape batter into prepared pan and spread evenly.
  • Bake brownies for about 40 min. The top will be cracked and the center should be just firm to the touch (toothpick test will show moist crumbs).
  • Cool COMPLETELY and cut into 2” squares.

COCOA DUST TOPPING:

• In a bowl, mix cocoa powder and powdered sugar and sprinkle over the cut brownies.
